The oil is extracted from the olives by cold press and is left unfiltered to retain all the healthy substances present in the olives. This means that our olive oil is not clear in appearance (usually associated with filtered oil) and it has a beautiful intense tart, peppery flavour.

Over time these substances will naturally settle to the bottom of the container and the intense flavour will slowly fade by the natural oxidation of the oil. This process is accelerated when the oil is exposed to air, light or high temperatures.

 

In agreement with the natural farming methods proposed by Masanobu Fukoka, we do not plough the ground around the trees, nor do we use pesticides or fertilizers. In order to promote a healthy polyculture environment and help to keep the land fertile our olive trees coexist with other types of trees, shrubs, wild herbs and grasses etc.
